In regards to programming eeproms, (odometer correction) can I edit only certain parts of the code or do I have to completely erase and program fresh code? I'm looking to only edit a few lines of code. Thanx in advance

Also I've used programmer specifically for odometer correction but it was very limited, so I have a basic understanding of how it's done

Yes. You can edit the code and then write it back to the EEPROM.
