Is it possible to program an M25P32 part with the GQ-4X device profile for the M25X32?

Yes. It just slow.
The larger SPI chip needs a faster programmer. The GQ-5X is a faster programer.

I'm having problems programming the M25P32. It looks like some of the PROM is just blank. Does the GQ-4X software have trouble interpreting Type 04 Intel hex records? |

If you are using standard Type 04 Intel hex records, then it should be supported.
If it does not work, then you can send us the hex file, we can check it for you.
