If I need to copy a 27C256, can I use any 27C256, or does the suffix such as "27C256 -125DC" make a difference? Are there other things such as manufacturer that make a difference or will they all work the same?

They are the same chips except the response speed. The -125DC means 125us maximum response speed of the chip.
For the programming, the response time is not that important. The programming algorithm running speed is much slower than that.
The manufacturer makes different. But most of them are standard and they want the compatibility too.
